The best way to grade choice boards is with a rubric, such as the one shown below. I prefer using criteria such as: content, appearance, and writing. Sometimes, I also include vocabulary as an additional criteria.
It's helpful to give students the rubric you'll use when you assign the actual choice board, so they know how their work will be graded.
One option is to have students come individually to the teacher table with all of their choice board work and rubric, then grade it with them. This allows them to understand why they did or did not earn full points for something, and they will likely improve next time your class does a choice board.
